Is this week going super slow for anyone else? I feel like it should already be the weekend but I’m BARELY halfway through my Wednesday. Needless to say, I have spent wayyyyy too much time thinking about food and what I want for dinner tonight.
As I mentioned yesterday, I am planning to make Mac and cheese with buffalo sauce and spinach. However, I also want some meat, so I am adding cut up chicken breast. I know this is going to be a filling dinner, there will be plenty of leftovers. This will get me a few extra meals for lunches for the rest of the week and possibly another dinner.
As for the rest of the week, this is going to be tough. I literally only have pasta, rice, spinach and a couple of pieces of meat. I also have some canned food, but it is difficult to use that for a full meal. It is going to be tough, but when there is a will, there is a way.
